Started with a 3lb sirloin pork roast

rubbed with

2½ Tbs Paprika

2 Tbs Kosher Salt

2 tsp Minced Garlic

1 tsp Cracked Black Pepper

1 tsp Onion Powder

1 tsp Cayenne Pepper

1 Tbs Italian Seasoning (Basil, Thyme, Oregano)

Smoked with RO Lump and Cherry

Rubbed and into the smoker

Pulled at an IT of 140º and rested 30 mins.

Excellence on a plate!

One of my favorite cuts that many don't know about.

I just bought four roasts at $1.49 per pound.  About what we might, on a good day, find pork butts on sale?

Sliced thin they make an excellent and lean chop.

They are also about perfect for a lean Canadian Bacon!
