Hi all,

I've been a short time lurker and took the step to join this wonderful forum.

Time to introduce myself, I live in Canberra, Australia (The nation's capital!) and am a qualified (ex) chef with a passion for quality produce and cooking techniques.

We are burdened in Australia with a limited range of smokers and cooking techniques (more commonly in Australia at social get together people call a 'Barby' <BBQ> which is more often then not simply gas grilling. No charcoal or smoke invovled)

I have begun my adventure by studying my products and purchasing my products from a range of places (US and AUS). I'll be looking to document my findings, modifications, suggestions so hopefully other people here in Australia can have some help along the way.

I am a keen organic gardener and also roast my own coffee beans and love to showcase my works to others.

This next chapter of cooking (smoking) has really got me excited and I can't wait to get involved and document the creations and thoughts I have on the whole process.

The enthusiam and support of this forum is incredible and something I wish we could harness back here in OZ and get a lot more people invovled.

 I joined the Aussie BBQ forum a few weeks ago and found the differences in the way we do things educational.

 You may like to look under the groups tab in the forum and join the chefs group.

We always enjoy having new blood in the groups.

If you can't locate the answer just ask folks here are willing to share there knowledge.
