My name is John and I leave in a small town just west of Charlotte. I'm very new to the smoking world but have really started to enjoy learning this great form of cooking. I am in the process of acquiring a Real smoker but in the mean time I use a charcoal grill that has a front door that allows access to the coals. I just built my fire on the side opposite my smoke stakes and place my food on the opposite side. I have had decent success so far. If anyone leave close to me I would live to here from them. Thanks in advance to all for the help you give us Rookies.
