Alright it has been a LONG time since I have participated in any Q-View posts.  I recently picked up a MES 40" and have been using it quite a bit for parties here and there but have been slacking on my documentation.  I have been really craving some beef ribs and I hit up a local small town butcher here in Phoenix and picked up a slab.  I have never marinated them in the past and figured this would be a good time to try it and make the ribs seeing as I will probably be really short on time with my first son coming any day now.  

The marinade is a just a complete out my arse concoction and I have never made a marinade before so we shall see how it comes out.  I made it with a good amount of stuff but it largely some apple cider vinegar, and mixed juices.  I also have some habanero hot sauce, cayenne pepper, black pepper, kosher salt, honey, thyme, brown sugar, cinnamon and I think that was it.

Anyway here are some shots of the meat and marinade ready to sleep for the evening for smoking tomorrow, as long as I don't end up at the hospital with the wife.

Also of note don't worry about those bottle near the meat they are just sitting there in anticipation and still need to be cleaned and sterilized.  :)

I will post some more pics tomorrow as the afternoon progresses.

Will that be your first child or your first son?  Get some of those ribs in vitro to him ASAP!  No better time than now to start turning him into a dedicated meat smoker, lol!

Sounds like a sweet and hot marinade!  See if you can remember the amounts of ingredients and post them here as a reference so you can duplicate/change your Mastery of the Marinade!  Also, to help you on your documentation, keep a smoking log of your smokes.  A good and free program to use is Evernote.  You can create a great filing system and also snag other recipes super easy too!  A couple add on programs is Web Clipper for Evernote and Screenpresso for Evernote too, also free.  Just go to www.evernote.com and have access for all their programs.  With those, you can capture posts, selections, web clippings, screen grabs, etc. and import them into Evernote effortlessly.  I also use a free .jpg viewer program called Irfanview.exe ( www.irfanview.com ) along with it also. (notice the commonality amongst them?  ..... "FREE"..! lol!)

This will be my first kid and son.  My wife has a little 3 year old boy as well so I have a little bit of practice before Mac comes this week.  If he isn't born today or tomorrow she will be induced on Monday.

So I let them soak all night.  Got the smoker all cleaned up and ready and heated.  Took the ribs out of the marinade and rubbed them down with Jeff's rub.  They are going to go in any minute now so I will be doing the 3-2-1 method.  I have to help a buddy move real quick so hopefully I don't miss the 2 step but if I do I hope the misses doesn't mess it up too bad.  :)

Alright just got back from helping my buddy move so the wifey helped with step 2 and did a great job!  Here is a pic of what they looked like coming out of the foil and getting ready to firm up a bit more before supper.
