Local IGA had ground beef 85/15 on sale $2.59 lb. ended up with about 30 lb. Made 10 lbs sticks. No problem ordered 10 mm stuffing tube from http://www.onestopjerkyshop.com/ they had em in stock. Should be here in time. However, I also ordered the 3 tier drying rack (got my $5 off for registering). But the drying rack is back ordered until March 29 so they will ship the order complete. The Major Payne quote came to mind "WHO'S THE DUMMY NOW!" oh well get out the jerky canon.

I went 1/2 again as much on the heat in these and they are about right.
Also made up a batch of summer sausage to use the new LEM 5 lb. I love that thing.
Used travcoman45 recipe:
Summer Sausage 5 lbs
5 pounds ground beef, with some fat in it
3 tsp salt
1 1/4 tsp Dextrose
3 tsp fine ground black pepper
2 tsp ground Mustard
1 tsp cure #1
1 Tbs Marjoram
2 tsp Paprika
2 tsp Mace
1 tsp Garlic powder
Made 10 lbs.
Took 3 lbs and added the diced jalapenos and high temp cheddar.
Took most of the seeds out of the jalapenos for texture but left the membranes (I want heat). Went about 10% on each, looks heavy but we'll see.
Smoke em up this afternoon. the one with the string is the jalapeno cheddar.
