"Morning everyone, The local supermarket has Pork Picnic Roasts on sale for $1.00 a pound. I've only used Pork Butt for sausage before and was wondering how the Picnic Roasts work out. Thanks in advance.

Picnic Roasts work just fine for sausage. It may require a bit more work on your part to remove sinew and such as the 'picnics' may have more connective tissue to deal with.

Here's a page with good info:

Bob, morning...  If you feel you need more fat in the sausage, and the market doesn't carry it, I have used a pkg of Bacon ends and pieces....

I look for a fatty pkg and separate the fat from the lean....  The lean gets saved for beans etc....   Dave
