Smoking in the NC mountains

and in a Masterbuilt 30. My chef son and I were smoking tasso ham in his mother's propane grill. I couldn't convince her hickory smoke wouldn't hurt a stainless steel grill. My own smoker resolves the issue.

Just started smoking general food. I keep a journal of date, meat, rub, (no injections yet), wood/amount, temp/time.

In addition to online, my references are the "Dadgum good" book, "Smoke and Spice", and "Charcuterie" by Michael Ruhlman.

The forums are killing my (in other areas) productivity. I've already:


- picked up tips on smoking in the MES

- ideas for my next smoke. I'm doing a Boston Pork Butt that will become pulled pork.


Must ... get ... back ... to ... work ... well maybe tomorrow!rolleyes.gif

welcome1.gif I have been up your way a couple times. My wife grew up in Lenoir. Nice to have another NC smoker on board. Why don't you join our NC Smokers group,

We are also having a NC gathering in 4 weeks.

Thanks for the welcome. I joined the NC smokers group. My wife's people are from Caswell County. We're headed there to celebrate her mother's 82 birthday on April 28, so I won't make this year's NC gathering.
