For my bachelor party tonight, I'm smoking two 2.5 shoulders.  I've done one successfully once, so here's my second try.  Basic rub again.  Hickory chips.  This time I'm using a chimney starter to get my coals ready which, now that my first set of coals are getting ready, I'm not sure why I haven't been using all my life. 

The plan is to smoke for about 5-6 hours and then finish off in the oven for a few hours. I did this last time and there was PLENTY of smoke on the meat, plus I didn't drive myself crazy at the end.  Pictures to follow, of course.
 
Sounds like a good plan!  BTW, if you would please, stop into Roll Call and tell us about yourself, your equipment, experience, etc. and allow us to welcome you properly, and also if you could add your location to your profile too!  Bachelor party, huh?  Its been so long I almost forgot how to spell it, lol!  Thanks so much and welcome and enjoy!
