Hi from Plano, TX.  I stumbled across this great site while doing some research before purchasing a smoke generator.  Glad I found this site because after reading about the A-MAZE-N pellet smoker I changed my mind on what I wanted to purchase.  Saved me some bucks and headaches.  I have been smoking for about a year using a MBES-40 with mixed success.  I have already picked up some good info here.  Like many others, I was introducing way to much of the wrong kind of smoke with a smoke generator that I built.  Tons of white smoke.  Now I have my pellet smoker and looking forward to using it this weekend.  Like many others have said, Todd at A-MAZE-N products is real stand-up guy.  I chose 3-Day Select shipping because I wanted to have it before the weekend.  He knew the USPS could get it to me in time so he changed the shipping and refunded the difference.

Well, now that I have introduced myself I will get back to work.

 to SMF . You have come to the right place for smoking info. This site is loaded with great info just use the search bar at top of page to find what you are looking for. If you can't locate the answer just ask folks here are willing to share there knowledge.
 
Thanks for the warm welcome!  I used my new A-MAZE_N pellet smoker for the first time this weekend on a rack of spare ribs.  Looking forward to this upcoming weekend to use it again.  Gonna be smoking up a mess of ribs for a birthday party.

Yup, that haze in the air over Dallas isn't smog; just a nice thin blue smoke left over from the weekend.
