Winn Dixie has spare ribs for $1.99/lb. Pretty cheap so I smoked a couple racks today doing the 3-2-1 at 225* with hickory. Brushed with olive oil and used the rub recipe I found online long ago.

All trimmed up, membrane removed. Froze the trimmed off meat for beans, etc.

I was kinda scared pulling them off because they looked dryer than usually. Took them in the house and cut a couple and they were moist inside. Never seen the outside look that dry before but they were good. BBQ sauce on the side to dip in.
