Afternoon everybody! 

So I’m in process of moving and my Pops and Mom have been helping me around the house fixing the place up to rent (yeah, go figure my place isn’t worth what I paid…geesh!), painting, sliding doors, etc and wanted to do something nice in return.  They have never seen or tasted my brisket so I figured it’s the least I can do after all they’ve done for me.  My parents are great people who would do anything for me…this was a small appreciation and thank you cookout!

In comes the brisket!!!  I couldn’t find too many mega briskets so I settled for an 8 pounder that had a smaller point.  Sorry guys, no burnt ends.  Rubbed it up and put it in the fridge.  I also Didn’t have to do too much trimming of the fat which is always a good thing.    I planned on doing an overnight smoke starting around midnight but low and behold, my plans during the day “forced” me to fall asleep on my couch around 9:30pm!  FYI…spending the day at Ft. Lauderdale Beach, during Spring Break, on a Saturday, at Blondies and Elbow Room is a great way to “force” yourself to an early bedtime! 

Needless to say, the brisky went on at 4:00am after waking up and starting my fire at 3:00am!  Once it hit 160 degrees, about 10:30am, it was foiled and pulled at 205 degrees which finished around 2:00pm.  Temp the whole time sat around 225-235 degrees…love my drum!  Afterwards it was thrown into the cooler which is where it sat till dinner!  Came out great, super tender and juicy!  Nice smoke ring too!

Rippin, I was up in Deerfield with my family this past Saturday at the Renaissance Festival in Quiet Waters Park. While I was there, I swear I caught a whiff of your brisket!

Thanks for the kind words guys!  Yes, the parents definitely enjoyed the briskey!  We pretty much demolished that one with minimal leftovers!  I'm going to miss making huge cuts of meat and sharing with them every other weekend.  Looks like they will have to come see me now!

Luv2Q, RenFest...always a good time!  Haven't had a chance to go this year, but have in years past.

The Rub, cheap and easy...didn't have too much time.  Hope this isn't cheating...
