First dutch oven cooking - chicken and potatoes

Just picked up my first dutch oven.  Nothing fancy, just a 5 qt. Lodge logic cast iron DO.  Decided to give it a shot tonight.  I just did it on the stove top, no oven or fire.  Made a really simple recipe that turned out pretty well, just wanted to share.


2 tbsp butter

1 tsp olive oil

8 oz. chicken breast, diced

6 oz. carrots, diced

2 medium red potatoes, diced

1/2 can crushed potatoes

chicken stock

1 medium onion, diced

4 cloves garlic, diced

1/2 tsp smoked paprika

1 sprig fresh rosemary

2 bay leaves



I melted the butter and sauteed the onions and garlic.  Once the onions were translucent I added in the carrots.  I then moved everything off to the side of the DO and added in the chicken and the olive oil.  Once the chicken was browned I added in the smoked paprika and mixed everything together.  After a few minutes I added 1/2 can crushed tomatoes, potatoes, and bay leaves, put on the lid, and left on low for an hour.


For my first DO attempt I thought it turned out pretty well.  Can't wait to use this more frequently!


Hopefully this post makes it through.  I posted yesterday morning about some whitefish I threw in the smoker, it still hasn't been cleared.

Sounds great Mike!


Welcome to dutch oven cooking.  I am using one that we estimate to be about 60 or even 80 years old.  The history is lost.  We figger it might have come from a grandmother, and we are both old farts.  LOL


Every time I use it, I feel the loving hands than went before me generations behind.


Keep up the good work, and post up some pics of your triumphs!

Sorry guys, no photos.  Apparently they block new members from making posts with photos in them and send all of them for review.  I smoked a bunch of fish this weekend, posted a new thread on Saturday with a bunch of pictures. Almost 48 hours later and the post still hasn't been approved.  The dish did have a gorgeous color though, I'm guessing mainly from the smoked paprika.  I'll make it again and get some photos of it next time.

Sorry guys, I didn't take any photos.  Yes, I know, no Q-view (DO-view?) is a sin.  I wish I had taken some pics now.  Rest assured, I'll post more pics in the future.  It was definitely tasty though.


I've been using fresh rosemary a lot lately.  I really like rosemary, and the flavor and aroma is so much better when using fresh versus the dried stuff.  Really made the house smell nice while this was cooking!
