1. I have a hard time keeping smoke rolling constantly in my wood hollow smoker(gas). I have used it twice and had success but it seemed like I had to watch it most of the time. My question is   Do I need to use lump charcoal in the wood box and place moist chips on top of the coals or am I doing it right by using just the chips?

2. How do you add more chips or water and not lose too much heat? everytime my chips burn down and I add more it stops smoking for almost 10-15 minutes.

Your gas smoker should recover pretty quick when you open up to add chips.  Remember we are not looking for thick white smoke.  We want thin blue smoke.  If you smell the smoke, it's doing its job.

Midwest welcome aboard I don't know about your cooker whats the chip pan made of? I didn't like the one that came in my GOSM gasser so I use a coffee can with double HD alum foil with a few hole punched in top might give you to much but thats what I use.

First off welcome Brianto SMF. Now like Al said your gas smoker will recover pretty darn quick. I know I use 2 all the time. I just put in the chips and let it rip and then after about an 45 minutes or so take a long knife and move around the unburned chips and let it go again for about 30-45 minutes. You will learn how and what your snoker will take to smoke right and the way you want your meat. So good luck happy smoking and:

Thanks for the tips, My first mistake is obviously thinking that I need tons of smoke rolling out of my smoker. I also didn't realize there was different types of smoke white or blue. I have done okay for my first few times it just seemed like I had to babysit. Some of that comes with me having no experience so I have been trying to absorb things as I am experimenting.

All the advice is greatly appreciated!

Ask away   between you and all the people on this forum you'll be turning out world class smoked foods in no time!  And you'll have fun doing it.
 
You may want to try using wood chunks, that's what I use in my propane smoker & they work much better than chips.
 
You have gotten some GREAT advice there. I use a combo of chunks and chips, the chips start smoking faster and the chunks go longer.

Al, you are the man. The wood chunks worked so much better. I had way better temp control and longer lasting smoke. The only problem I have now is where to find the best variety in bigger chunk form. everywhere i go has lots of varieties of chips but not so much for chunks?

Try Home Depot for chunks

The chunks were a little big, but easy to break into smaller chunks
