Thanks thoseguy!! Am i reading your temperatures correctly in your very first post here? 200f for 1 hour and then 100f for another hour? And then pull them at 170f? Heck, its 102f here today, i can just set them outside and they'll cook. Seriously, i need help before i start these fish on Friday. Smoker temp, time and internal temp? THANKS,!

Ok, the last two batches I smoked them between 210° - 220° for 2-2.5hrs.  I'm happy with the results of keeping my smoker around the 220° mark. Keep an eye on them after two hours and finish them how you prefer. IT with fish is sorta tricky because it can get to your desired IT fairly quick but not to your desired texture. My rule of thumb has been after 2 hours check the texture by pressing down on a fillet and learn to remember how firm it is. You want a little 'give' when you press down but you want it to be semi-firm too. Also, be careful with the amount of smoke you apply. If you like a lot of smoke then smoke it the whole time but if you don't want too much then only add smoke 3/4 of the time. When I see a lot of color to my fish I cut off the smoke and just finish cooking it.

Great Tutorial!! Trout are tough to come by fresh down here in Dallas... Might have to try smoking some Crappie or Catfish... Or maybe some Sand Bass.:30:

i would love to see a tutorial on butterflying a Rainbow.


i will just have to live vicarious ly through your posts for now..

Got a smoke fest coming this weekend though.... First Bacon on my Webber Kettle with a AMZPS, Chickens on the UDS and a nice Salmon Filet on the Lil Chief. Posts to follow....

Thanks. I'm sure crappie would be great smoked but unless I had an endless supply of them I wouldn't pass up a crappie breaded fry or just pan fry in butter with some S & P, especially for breakfast with some eggs, hashbrowns and toast! MMmmm

I've never had smoked catfish before. I'm sure the catfish eaters would say the same as I did with crappie but both would probably produce some great eats. Let me know if you try either.
 
I've got both in the Freezer and plan on cat fishing Saturday Night/Sunday Morning.... Might just do it sooner than later.... I need to figure if Mr T's brine will do OK on the Crappie....

I'd be careful on how long you keep those little crappie fellets in the brine. A dry rub with salt, pepper & brown sugar for an hour would probably be plenty for those little things. Make sure to rinse them off well too, maybe even soak in water for 30 minutes. Keep me posted.
