Hi Guys,

I am a brand new member and have just got into smoking. I live in New Zealand and smoking (fish in particular) is very popular.

I've just completed my plywood smoker, (pics below), which should be good for hot & cold smoking. I had my first smoke with it a couple of days ago (just some Salmon frames) and it worked even better than i had hoped for. I now want to try smoking some sausages.

Can you smoke pretty much any type of suasage or are some sausages better to smoke than others and what temperature is best for smoking them?
