More Beer can chicken

SweetBay here in Florida has whole chickens buy 1 get 1 free, sale ends tomorrow. So I picked up a couple and did the beer can thing since they always turn out good. Going tomorrow to grab 2 more and put in the freezer.

Brined with Slaughterhouse Poultry Brine over night, (14 hours) brushed with olive oil, rubbed Kick N Chicken on 1, and Sazon Tropical on the other.

Smoked at 250*- 260* for 3 hours 20 mins.  with apple chips, breast temp was at 170*. Thigh 175*

Skin was a little soft but the meat was very juicy and tastes great.

WHEN I STARTED COOKING BEER CAN CHICKEN I DIDN'T HAVE A SMOKER SO I USED THE BRACKET, PUT THIS ON AN ALUMINUM PIE PLATE, IN THE CAN, BEER, COLA OR TOMATO JUICE AND AROUND AND ON TOP OF THE CHICKENS CUT-UP GARLICS, ONIONS AND BELL PEPPERS THEN, WRAP THEM IN HEAVY DUTY ALUM. FOIL AND THEN TO THE GAS BBQ GRILL, COVERED, MED TO LOW FIRE. IN ABOUT 45 MIN. THEY ARE READY, REMOVE FROM THE PLATES AND GIVE THE 5-10 MINS OF MED-HIGH FLAME TO BROWN. USE THE JUICES ON THE PLATE. WAIT FOR A COUPLE OF MINUTES THEN CARVE. GOOOOOOOD STUFF.
