I am a big fan of scotch eggs but have never made them before let alone smoking them. So I decided to take the plunge this weekend.
I was going to buy some sausage from the store but it just felt wrong. I know I make better sausage than what is available commercially so I did the right thing. Here is 15lbs of boston butt cut into strips for the grinder.
I mixed up my seasonings for hot breakfast sausage.
