Beef Back Ribs Today

 Wish I could get me some beef ribs round here. Everyone cuts them so close to the bone they just scrape them for burger
 They key to getting good beef back ribs is, find a good butcher shop,go in and make friends with them, and ask them for some that don't have all the meat cut out of them. Most butcher shops are like drug dealers, meaning they keep the good stuff in back. The good beef ribs usually will not be in the cooler in front. You can usually score primo brisket and other cuts by asking also. When your butcher friend then sees you coming in to his store every friday, he will be more than happy to "fix you up".
 
Looks great, did the ribs have a large fat membrane that you had to pull off ?  Or did  you leave it on?

I made some beef ribs the other day and they were pretty darn good but I didn't pull the membrane so that got in they way while eating.  I think the membrane comes off ?!
 
Yes I always remove the membrane on ribs if I can get it off. I have heard if it is hard to get it started, run warm water over them to help get it off. Some people leave it on though.
 
 
I smoked beef ribs Sunday myself. I had to go to several different stores and like the original post I found them at Publix. They came out great using the same method kinda. We had a nasty storm come through about the 2.5 hr mark on the first step. It was to bad outside so I had to finish in the oven. I would like to try again the next few weeks. I used apple wood this time but would like to try pecan or peach wood.:grilling_smilie:

Completely agree with this... nothing is better than having a butcher save you some good cuts knowing that you'll be in to pick up whatever he's got.  
 
Man o man, outstanding! That's what I'm looking for. I just dusted a rack down and stuck it in the fridge for tomorrow's dinner. First time smoking Beef back ribs. Gonna do the 321 method in my MES. That money shot is real inspiration!
