Well I'm trying my first Chuckie like I mentioned in one of my posts.

Thank you everybody for your kind words. I was kinda leary of posting here because I didn't think I could measure up to most of the great posts here.

On to the post.. I purchased a Boneless Beef Chuck Shoulder Roast. Just a little under 3 pounds. I'm going to smoke it around 225 degree's.

I seasoned it with Sea Salt, Coarse Black Pepper & Powdered Garlic.

I put it on the smoker about a hour ago so we will see how it turns out. Pics Below..

Of course after seasoning.. Keeping my fingers crossed. I've never cooked one of these before..

I don't know what happened but I couldn't get this thing done. The chuckie went in about 10:30 & wasn't done until 9:00 PM.. I couldn't get the IT up. I never wrap meat but I gave up on this one at about 162 IT &wrapped it until it hit 186 IT.. I would have gone higher but the family was hungry.

Actually it turned out great & most of it is gone..

I tried some taters. That pan is a 8 x 8 inch pan. I used new potatoes. washed them & cut em. I seasoned with Sea Salt, Fine Black Pepper & a thin dusting of Garlic Powder. I cut up a stick of unsalted butter & placed on top of the taters. I filled the pan with water & placed over the water pan on the smoker. They cooked for about 6 hours. They were good.

Finished product.. The potatoes didn't last long.. None left..
