I am from Union County, NC in a small town called Indian Trail about 10 miles east of Charlotte, NC. I have lived here since 1990. I am originally from a small town on the east coast called Wallace, NC just north of Wilmington. I have been smoking and cooking just about everything since I was a kid. I have a gas pig cooker with a smokebox attached but mainly use a 40" MES. I smoke turkeys, chicken, sausage, pork butts, loins, and just about all kinds of meat, fish and poultry and even vegetables at times. I am the designated Thanksgiving turkey cooker at Thanksgiving and the ham at Christmas. I love cooking outdoors and often grill steaks, chops, and chicken, even hotdogs on my weber charcoal grill. I look forward to everyones input and experiences they share.
