Smoked CSR's on the Weber for My Son

Thread Starter

My son was home from college this weekend, so I threw some CSR's on the Weber and smoked them up for his last night home.  Started with a rub of Rudy's, black pepper, garlic powder, and brown sugar.

Smoked them at a really steady 250* for nearly 4 hours to an IT of 168* -- took much longer than usual for some reason....  I used lump and hickory.

I set these under the broiler for a little crispy caramelization (about 2 minutes/side).  Turned out great!

Got a couple of close ups:

And this one from my son showing ME my own smoke ring (LOL)!

Rounded out with homemade apple sauce & rice.  Delicious!  thanks for looking!

I was wondering the same thing until I saw the pics, looks like Country Style Ribs to me.

Our country style ribs(they call them something else here but can't remember what) look different than that and what looks like a bone

is oriented the wrong way(to me anyway)

Those look great!

A confession?  I cooked those more often on the old Weber and on a gas grill with indirect heat (70's here, we all had to have them) back then.

Firing up the old ECB just for some CSR's was out of the question!   biggrin.gif

Gas grill is history, but the old Weber will be buried with my truck and me!

Good luck and good smoking.
