Greetings from Western Washington state.


I have a 6 year old charbroil grill with side smoker that has worked in 100 degrees and in freezing February rain. I can't even count how many times I have grilled in the rain! I recently got a Masterbuilt electric smoker for my birthday. I am eager to learn more about using it because it's so different than using coals. My first attempt was a 3 lb pork shoulder that got a bit too much smoke cause I didn't open the damper at all.


I guess I am above average on the grill. I have done a handful of briskets that were hits at family get togethers and I make pretty good ribs as well. But I follow recipes and haven't really tried any of my own yet. Too scared to screw it up! I am far from an expert, that's for sure.


I am really looking for smoking recipes for jerky, cheese, and salmon.
