Started 14lbs of Shoulder this morning. We are out of our freezer stock. I will package in about 1.5-2lb packages.

Coated with rub and into the smoker @230 using hickory.



Here it is 2hrs in



Here it is 4 hours in. Starting to get a darker bark.



In about 30 minutes will be the 6hour check. Ill update with more pictures as I go.

Also took its temp for the first time and they are right at 160.

Those look perfect, Brian.  I'm another one that likes to have some pulled pork in the freezer.  Sure is nice to just grab a package and heat it up.

how do you package it and heat it up?

I put it in a vacuum pack bag and seal it good. Then I pull it out and drop the bag in the boiling water and it steams in the bag. Oh when I package it I put some juice from the foil in it too.
 
Here they are about to go into the foil. Getting a nice bark on it now.
 
Just pulled them out. Gonna be a bit before we pull them. I did snag a little bit out of there for a taste. And boy oh boy was it good.
