Hey everyone,

I'm Troy and I originally from Texas, but I am living in Mississippi. I got started smoking with an ECB. After having some initial success I "upgraded" to a vertical Brinkman smoker. I realize it may not have been much of an upgrade, but after some improvements, it has put out some great meals. The smoke bug has definatley bitten and I have been scouring the Builds forums getting all kinds of ideas. The next upgrade for me is to build my own. However, I will be moving to Costa Rica in the near future so it may be a while. Who knows, maybe I'll build and UDS while I'm down there.

After being on some other forums I must say this is by far the best I have been on. It is put together very well and is full of very knowledgeable, experienced and courteous members. I look forward to many great interactions.

 to SMF Troy. You have come to the right place for smoking info. This site is loaded with great info just use the search bar at top of page to find what you are looking for. If you can't locate the answer just ask folks here are willing to share there knowledge.

First off welcome to SMF there Troy. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

Hey Troy. Welcome aboard. I am also a displaced Texan.  Just remember the BBQ joints of your youth and try to match it and you are on the right track.  It brings back memories every time I slice into a brisket and take a bite. 
 
Yeah Bsma BBQ, I enjoy smoking all kinds of meats, but by far my favorite is briskret. So far I have done pretty good with them, but Ive got a lot of way to go to make a great brisket. Perhaps some more practice is in order.:grilling_smilie:

My husband and I moved from Grapevine, Texas to the southern mountains of the Central Valley in Costa Rica! Not being native Texans we never smoked anything ourselves, but after living in CR we started missing the flavor. We built a smoker out of two 55 gal. drums and now we smoke trout from our pond, pork sausage and chops and we are experimenting with everything we get our hands on. Finding good woods is a problem and after reading the post of the guy living in CR whose mouth went numb from eating chicken smoked with mystery wood I think we will be a bit more careful!

I am interested to hear what is bringing you to CR.

TexaRica - glad to know there are others there who have been able to build a smoker and are smoking. I had wondered about being able to get good wood. My family and I will be missionaries to Mexico and will be coming to San Jose for a year of language school. When we get there I may have some questions for you.
