My first attempt at bacon .

I have been making sausage for about 10 years now and I finally decided to try my hand at bacon . I'm making 15 lbs .this is what I'm working with a6934e13-3ac9-2b98.jpg
I'm making 5 lbs of peppered

Hope to have them in the smoke house Thursday or Friday . Plan to smoke with oak and pecan . I can almost taste them already .

All of this bacon talk has really got my curiosity up! How does the price compare to store bought? I know it's apples to oranges but have no clue how much bellies run or where to even get them.

I paid 2.19 a lb . I had everything else . For me to buy thick slice pepper bacon it almost 9 bucks for a lb and a half . So for me it pays off pretty fast .

Looks great! I need to get some going too, I have about 15lbs in the freezer I need to brine up and smoke!

Where and what type of maple are you using. I am curing out 10lbs now and will be putting in the smoker in the morning. I still have 10 more lbs that I would love to put maple on.

I found some b grade light colored at a small grocery store .I added 1/2 cup for 5 lbs .

A little update . I pulled my bacon and washed it off . Then I fried me some test strips . Taste pretty dang good . a6934e13-afcc-bd61.jpg
So now it's in the smoke house getting smoked with pecan and oak. Will pull it out in 12 hours or so.a6934e13-b00e-0f2f.jpg

I'm paying $1.79/# for my pork now.  That is on a cheap side of it, but I have a connection through the restaurant I manage.

I paid 2.19 a pound for the bellys . Had everything else . So I got almost 30 lbs of bacon for 63 dollars . The pepper bacon I normally buy is almost 9 dollars a pound .
