Hi I am from Nashville Indiana. I have a restaurant called "the Original" Soup to Nuts. I am relatively new to smoking. I have a grill that is half gas and half smoker with a side car. I had not ever smoked meat until about a year ago and I have come a long way. I use charcoal and hickory. I smoke Pork Butts for pulled pork, Spare ribs and chicken. I have a lot to learn but everyone seems to love what I am doing so far. I do need to find a wholesale place to purchase hickory chunks, so if anyone knows of a place , please let me know.
