how much ECA per lb of meat

So can we assume anywhere (somewhere?) between 1.5 to 3 oz for 25 lbs will provide adequate tang?

I'd guess if they were all the same product and just packaged for different suppliers then I'd say yes.

If they are different concentrations of acid designed to have about the same tang, then using one product with the other one's recommended amount will be quite a bit different...
 
Well here's the one I got from B & P.   It's kind of crazy how different mine and Joe's packages are.  Both from the same company and both 1LB packs.

Maybe  they are giving you the amounts per their prefferences, or maybe some give you a lower suggested amount to be safe so you don't use too much by maximizing your amounts?

this is why I bought fermento, using ECA in small batches can be tricky, altho I haven't used the Fermento yet it just sounds  easier in the instructions....LOL

My sheep casings came a few weeks ago and the were in a pkg that looks like this one.... Is B&P an online distributor of products or a actual business you can walk into

I think they are just working through some old inventory. Some of the stuff I have been getting of late has had the new label on it.
