Well as some of you all know I am doing a rib roast for Valentines day. I had a few requests to post up how I do it so here it is. This post is only going to be of the prep work I will post the smoke and all the fixings tomorrow or Wednesday. The fixings will be garlic mashed taters (the real deal not a box), mixed veggies, tossed salad (both from a bag, I cheated here). 

 This rib roast is about 4.5 pounds. I have another to do at a later date that is about 5 pounds. We decided to do it later since the oldest boy is going out with his GF and the youngest boy has too work. We told the oldest he could have his GF over to enjoy this smoked goodness but he declined. I'm sure you all know how that goes. Any way on with the details on how I prepped this rib roast. Since this roast didn't have allot of marbling I decided to inject it, to ensure it would be nice and juicy.

My injection of choice was;

1 cup low sodium beef broth

1/4 cup Worcestershire sauce

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp rosemary (ground)

few cranks of pepper corn melody 

a bit of Kosher salt 

After I mixed this up I put it in microwave to heat for 1.5 min. I then placed it in the freezer to cool. I did this to help the flavors mingle don't know if it actually helps but it also cant hurt. I normally make my injections a day ahead and let them sit in the fridge, but some dummy was thinking the `14Th was Wednesday.

 Thankfully the rib roast was thawed being taken out of freezer early Sunday morning. 

My rub of choice was one I have used in the past on stakes and other beef. 

4 TBSP Mrs dash stake seasoning

4 TBSP roasted garlic and bell pepper

1 TBSP onion powder

2 tsp garlic powder

2 tsp rosemary

2 tsp kosher salt

1 tsp pepper corn melody

I decided to try using the thick Worcestershire sauce as the glue for the rub.  I tasted a bit and man it made a world of difference in flavor of the rub, In a good way. I will be using this again. The roast was slathered with the thick Worcestershire sauce and rub applied. It was then wrapped up tight in saran wrap and put in a Ziploc, and placed in fridge till tomorrow afternoon. That's all there is for the prep work Now for the Q-View.

There ya have it how I prep my rib roast. I was going to take a pic of the slather as well but I spaced it off. Hope ya all enjoyed checking it out. Don't forget the smoke and fixings will be posted up later. 
 
Wow, looks great!  Too bad you weren't doing both; they would have fit together to make a nice heart being about the same size!

That's brilliant Pops!! I'm thinking the same could be done with two bone in ribeyes. Thanks for the idea!!

Edited to show the Valentine's card I made for my wife.

Not sure she liked it as much as I did.

OOH man your not kidding.  I tried a bit on a spoon and WOW what great flavor, according to the bottle it is the same as the regular only thinker I am going to try it as well much more flavor then what I am using, and not much more cost.

That pic shows exactly why long boned RR's have the biggest eye. Nice choice! Presume you picked it off the shelf after a search for the best and rejecting the rest.
