I am not unhappy with my first try but I did learn a few things . . put rolls across the racks, some of the fat drippings missed the pan and landed in/on smoke box that started a little fire. Need to get another temp probe, replace rolling pin lost in divorce, get better at working with stretch wrap (hate that stuff) . . .
I used a 1/2 pound of ground Venison and 1/2 pound of Jimmy Dean Hot Sausage in each roll.
I chopped up some red and green peppers, yellow onion, green onion, portabella mushrooms and jalapeno .. . sauteed all of it in some red wine
laid veggies out on some pepper jack cheeses and rolled up . .
I put a lite coat of my favorite mustard on half of the weave

I was pretty please with my first weave and wrap . . I even weaved in a longer piece of bacon to cap off the ends . . (not my ideal read it on here, forgot who)
At first I was pretty disappointed thinking that I over cooked/burnt them . . but the bacon was just about prefect, a couple pieces on the ends were a little crispy but the rest was pretty soft and chewy.
Over all I think they turned out pretty good . . there were no left overs!
I would like to thank all the people that left tips and ideals, they helped out a bunch.
