Hot, garlicly indoor pork updated w/q-view

I have made this several times before I got my smoker.  I wanted to smoke it this time, but with the weather outlook I'm just gonna do it in the oven again ( I know the results will be good ).  In a food processor you turn a jar of roasted japs, about 20 cloves of garlic, paprika, some catsup or tom. paste , and some chicken stock into a nice thick pastie maranade.  let it swim over night.

got a 2 pack from sams today.  one for tomorow, one for the freezer.

I put in the oven at 350 for 1.5 hrs. then down to 300 for 4.5 hrs.  cooked it right in the maranade with about an inch of chicken broth in the pan,  i take it out of the oven every couple hours and spoon the juice over the top of it, adding more broth to keep close to an inch of liquid surrounding the meat.  after the 6 hours i remove the pork from the pan, dump the liquid into a large measuring cup and pour the greese off of the top.  put the pork back in the pan, remove bone (should come out clean) pull the pork, mix in the liquid and enjoy!

JJ, it is really good.  I cook it right in the maranade at 300 for about 6 hrs.  take the pork out of the pan, de-fat the liquid in the pan, pull the pork and add back to the liquid in the pan,  I really wanted to see how this would be smoked , guess I'll have to wait for some better weather.  I don't mind doing short smokes in the cold, the long ones I'll wait another month to do. I update the Q-View tomorrow.
 
That sounds like a really tasty marinade! and I think it would be great smoked. Have you tried cooking it at lower temps? what temp do you bring the meat to?
 
Man that sounds GOOD. I added it to my to do list. How large of a jar is the peppers? Wounder how it would be if ya substituted chipotle peppers in adobo sauce for the roasted peppers.

That would be great and some would not be able to tell it was not smoked...Heat with built in smoke...JJ
 
Sparky, its a 12 oz. jar.  you could prob.  sub the chipoltes, i havent tried it.   The roasted japs I get are so good I hate to deviate from them.
 
Wow does it smell good in here.  If I could only show you what I'm smoking for apps. lol

This is a very simple way to do a butt when smoking isn't an option   That peeled garlic in the bag is the best. I keep it in the freezer and just pull out what you need when you need it
