Looking delicious, I like to roll mine then wrap, I'll have to try this way as well.  Those are my second favorite breasts...but if it's got bacon on it, I'm good with that anytime.

Hey jrp, This was very simple, but tasted awesome. I used boneless, skinless breasts, cut a horizontal opening in the thick side of the breast, stuffed two slices of pepper jack cheese in the opening, then applied a dry rub. After that, wrapped with bacon. Smoked with hickory for about two hours, I think, always use your thermometer, I don't really remember how long I smoked them,Good luck, Happy Smoking, Adrian.

I tried something similar with chukar, a canyon loving partridge from out west (originally from Asia), I didn't use enough cheese (or it all melted out the sides) and applied too much rub, but, for a first effort and no recipe, it came out pretty well. Took about 3 hours at 200°F over cherry.
