my mom was cleaning out her freezer and found a couple turkeys and asked if i wanted to smoke them..normal answer from me..HELL YEA! so she brought them over to me thawed out friday morning. So 1st thing saturday morning i fired up the side box smoker and got the birds ready. Gave them a good wash, dried and made 2 different injections.
1st
2 sticks melted butter
1/3 cup lemon pepper
mixed together and injected in the breast meat and legs
2nd
2 sticks melted butter
1/3 cup cajun seasoning
1 Tbs crushed red and black pepper
mixed together and injected in the breast meat and legs
didn't have time to brine so i used some bacon to help keep the birds moist
got the smoker up and rolling at 245 degrees with a combo of mesquite and hickory
lemon pepper
cajun/pepper combo
getting ready to pull the birds off, internal temp at 165
