I use a Thermapen & Taylor 9306. Sticks i take between 150-152. I have taken them from smoker at 149 and let then bloom, they get to IT by themselves before dropping.
The only probe i use in my smoker is the PID probe for smoker temp, i dont probe my sticks or larger sausages.
This batch is in the books, sealed and ready.
