My grand daughter is going to be down from PA for a week. So i need to get her loaded up with goodies to take back north. Goodies for my neighbor up there to.

Using up some SM mix.

8 lbs for tomorrow (my wife wants to go to the show)

Had to break open into a large bag of casings.

Using my longer tube.

Aint going to bother with weighing. Im not that critical anymore on this easy stuff.

Half hanging.

Loaded for some 140* for a few.

Couple of question Nepas.

Do you heat to a IT of the sticks, go by time, color or just done enough to know? I have made a couple of batches and cooled them down in ice water and then hung overnight to dry. Is there a formula or recommended time to bloom, which kinda goes back to the first question since most meats continues to cook a few degrees are you taking them out a bit earlier than if you used a ice bath?

Not sure I got the questions in the right order but how they make sense.
