I use a Thermapen & Taylor 9306. Sticks i take between 150-152. I have taken them from smoker at 149 and let then bloom, they get to IT by themselves before dropping.
The only probe i use in my smoker is the PID probe for smoker temp, i dont probe my sticks or larger sausages.
This batch is in the books, sealed and ready.
Cuts and loops. 9 oz worth
Cut to length and ready for bags.
Lincoln log building.
10 bags of 10, 1 bag of 7 and 9oz of end and loops.
