I was off this weekend but it was going to rain all weekend but still I want to smoke and run into a few opportunities.  There is only the wife and I so I was going to smoke some Country Back Ribs and a small half fresh picnic only 4lb for pull pork.  On Friday night I put the rub on both the ribs and the picnic and put in the refrigerator over night.  Then the fun began first thing on Sat.  The first big mistake I make was I but way to much charcoal  and got a real high temp in the smoker.  I got the temp down to 230 and it held there for a while.  I saw the picnic stall out on the temp around 150 but had read about that.  When it hit the 165 the sky open up with heavy rain and wind.  I then wrapped the picnic up and put in the oven.  The rib look great with a meat temp of 170 so I wrapped then up to let sit for dinner.  I then put the picnic in the over at 225.  It look like the temp of this then stall out again.  It only got up to 185 so I pull out of the over and wrapped in towels and put in the cooler for 1 1/2 hour.  I was looking for pull pork but the meal looked great and taste great.  It would not pull off so I slice it up and chopped it.  We had BBQ for lunch today and the meat was good.

So what did I do wrong not being able to get pull pork.  Did I use the wrong meat?  Should I have let it go longer in the over?  The ribs were to die for so tender and taste great.

As was said it has to go to a higher temp 200-205 to pull
