I was going to post this as my  Throwdown. but Brian told nepas it must be smoked so this one Is out .

Don’t worry it was not wasted the family polish  it  with flat bread  hummus   hot sauce and a coldddd  beer.

I made  fresh chicken  sausage with B pepper

Fresh garlic   fresh  coriander salt fresh chili .

On a metal skewer I put   chicken thighs with onion

Sprinkle with coriander powder, cumin powder , salt,

And an Moroccan   spice called raus al chanut (the mix of the owner of the shop).

On a hot grill add  fresh coriander .

All you got to do is ask JJ . Ras el Hanout loosely translates as "top of the shop'." The best the spice merchant could come up with Ras  means king in Ethiopian.
"subtle curry like with a spicy yet floral fragrance & a robust yet subtle flavour"

Originally contained  spanish fly & hashish

but this is the version that wont attract police attention.

Its from Ian Hemphills  Spice Notes .

All spices are ground .OK  3 &1/3 tbsp mild paprika ,2&2/3 tbsp each cumin &ginger ,4 tsp coriander 2tsp each of casia & turmeric  1&1/2 tsp fennel seed 1 &1/4 each allspice, green cardamon seed, whole dill seed, galangal, nutmeg & orris root 1/2 tsp each bay leaves, caraway seed, cayenne pepper, cloves, mace, cubeb pepper & brown cardamon. 30 whole saffron stigma.Orris root is from the rhizome of the Florentine Iris ,fine textured like talcum powder aroma distinctly similiar to violets .WHO KNEW.

Now Ian Hemphill is the man in spices here.

It was his fathers business, the book is in top 100 things in your Saveur magazine, etc

.His store is 5 minutes from me. I have seen versions with rose petals & not all of the ingredients listed above. I personally would put fenugreek in it & cayenne. I make a simplified version that I  use as a dry rub on chicken because I dont have 30 saffron stigma laying around the house. Im also a bit old for the hashish version & spanish fly lost its allure after viagra got invented.Pity people still  believe in rhino horn. Cubeb pepper is a long tailed peppercorn from Asia which I  dont  think adds much. Go get 'em.

It sure looks good Ahron! That might have been a winner.

Congrats to your wife for making that delicious looking tart! It's totally off the charts.

I like those flat skewers your using too.

Thanks to both of you for sharing the great looking dish and the spice mix

Ahron, morning... That looks so good as does all your food....  I guess that was a good pratice run for the next TD ??  I hope you didn't suffer having to eat it ...
