My first crack at beef ribs.

Used pecan chunks. Made a light/mild memphis style rub and mopped it down with an apple vinegar and beer mop. finished the last hour off with some baby rays sauce. 6 hours, 230 degrees. Made 4 racks. Guests were pleasantly pleased and plumped. yahoo.gif

Man, I haven't done those in a long time and yours look FANTASTIC!  I may just have to make a run to the store and fire the smoker back up!

man them look good. I cant get good beef ribs round here, they are all bone hardly any meat.
