First Butt Getting Smoked

I have been a visitor to the site often but this is my first post. I started with a 4 pounder this morning and the anticipation is killing me!

that I just built and I've had a couple of fires in it but this is the first smoke. Currently have her pegged at 250 degrees and a good fire in the hearth for coal transfer.

I do have a question. When should I turn the butt? I was thinking a little after halfway but will listen to the good advice I always read from you all.

Usually smoke them fat side up and don't touch them until time to probe ,foil or remove from the smoker.
 
welcome! its not necissary to flip or rotate. some folks like to wrap the butts in foil after they hit 165-170. I find that it helps keep the meat a little more moist and juicy, but it might prevent your bark from getting crispier. If the butt is in a pan, add some apple juice and stick some foil over the top. if I don't put mine in a pan, I just wrap the butt with foil, making sure it is sealed, but wrapped loosely and I add some honey, parkay, brown sugar, and dash of cayenne. but all this of course just opinions! you could also just wait until the butt reaches 205 and call it a day! either way, you will get great results! if you have a spray bottle, mix some apple juice and vinegar and spritz occasionally to give it another flavor profile and the vinegar will help tenderize. WOW! That's some smoker you have there. I personally don't turn my butts. Once they're in the smoker just let it set and do its thing.

Got my "QView"...I hope this is correct! I took them with my phone which I won't do again.

I did turn it over/flip about half-way through. The wife and I were pretty pleased with the results. I thought the bark was bit too crisp/tough in some places maybe because I left it on a tad too long? 3.75lb butt for 5 hours at 250 degrees. Anyway, enjoy the pics, I'm looking forward to smoking some more and posting.
