Very, very nice job Ahron!  I agree with the others in that it's great that you're doing the old world procedures and with that type of results, definitely worth the effort!  Thanks for sharing that post. 

I wish I had a way to dry cure like you do in your cellar.  Our local temperatures and humidity just doesn't allow for it plus add the fact that we don't have cellars here in coastal North Carolina (water table is much too high for cellars/basements here)....perhaps some day I'll build a dry curing rig.....
