My Duck Burger was made with Asia glace, ground black pepper uns sea salt. Thats it.

Looks great.   I was expecting to see you break the duck down and run through a grinder, but your burger looks much better

Around 72 C = 161 F for pouldry

Boy O Boy it looks yummy . if you can find goose do the breast like that and slice it thin.
