Another all nighter.....

After setting out all of those Peach Trees yesterday I came in and remembered that I had a Brisket to smoke for a friends reunion party today. So I rested for about 30 min. and me and an old friend pictured next to the brisket got busy and got that baby in the smoker. I just seasoned it with Slap Ya Mama. It weighted 10.3lbs and I did not trim anything off of it. Into the smoker it went at 7pm. I hung with it off and on untill 8am this morning and pulled it and put it up to rest until he comes to pick it up around 11am...Your not going to get a money shot because its going to a party so sorry...

By the way Todd`s little gaget hung with me the whole 13hrs. without a reload. I used his Hickory Pellets for the smoke.

What a nice thing to do for a friend.  Not many understand the time and effort into producing some great Q!
 
Wow What a day Roller...Thank god you had your buddy to keep ya going through the smoke!!! The brisket looks great..it should be the hit of the party.

Thanks guys ! Just got up and I slept like a log. Got a call and the friend that I smoked it for said it was the first piece of meat he could eat with his teeth out...I laughed like hell...Now its time for me to go and get some mexican food...
 
Todds smoke box on an upper shelf.  I hadn't thought of that.  You also have a widely foiled heat shield pan above the smoke box  Tell us how that works.

I'm still working with trying to provide enough oxygen to keep the smoke box ignited on a consistent basis.  It strikes me that this heat shield could either stiffle air flow or force a really wonderful small vented updraft to keep things moving in the cooking chamber.

You've got my curiosity.
 
I get my airflow from a small fish tank pump with the hose placed into the bottom side of the smoker. This supplies enough air flow to keep the AMAZPS going without any problems. I have a brick in the bottom of the smoker to hold the heat steady. This is not a Masterbuilt smoker so I am not blocking any of the heat being put out from the element. My heating element covers a large area of the bottom of the smoker floor. I have to put the AMAZNPS on top shelf because of room shortage in the smoker...This little smoker has a 1500watt heating element in it so there is no shortage of heat.
