Well I have been lurking on here for the past few months and am finally gonna introduce myself. My name is Wade but you can call me Herms I live in SE South Dakota but am originally from SW Minnesota and yes there is a big difference
. I work at a local hospital doing x-rays.
As far as smoking goes I am a total noob or rookie I do LOVE to cook pretty much anything I can get my hands on the majority of it being meat which is totally fine with me. Growing up on a farm I have that mentality that it is not a meal unless there is meat in it.
JUst last night I made mozzarella and it turned out awesome tastes and looks great.(Pics and thread to come after this.) I have yet to buy a smoker trying to either find one on sale else a co-worker of mine might have one that I can buy that her father built. I do have a amazps or how ever you spell it. A neighbor of mine has a old smoker that I am going to cold smoke so bacon in so we will see how that goes once the time comes.
I do want to say this site has an amazing wealth of knowldge from smoker builds to recipes to great people who are willing to help out as much as they can. (Always seems to be plenty of people willing to try out foods also.)
