Greetings from Eau Claire, WI

Unseasonably warm here- up to 42 degrees yesterday with little snow on the ground! 

I was given a Brinkman verticle charcoal smoker by a buddy, so I'm new at the smokin process.

Looking at making goose sausage recipes (seasoning) for snack stick, etc.  Have tried a few rounds but just not turning out that well . . . a bit of a learning curve!

Welcome to SMF..I am just down in La Crosse..just south of you..Yeah we are warmer, and NO snow at all...just unheard of for this time of year.  Good luck on your smoking ventures..this site is a very helpful tool to use.
