My 9yr old son shot his first deer and asked me to make him some jerky.  So here goes. I used Cabelas Smokehouse seasonings/cure.  I preheated my Smoke Hollow electric and got the smoke rolling, loaded up the racks and dropped the temp back to 150.  My issue is that when I dropped the temp it seemed that the element was not hot enough to keep the pellets going. I've had this issue with chips as well.  There is no damper on this model. Should I keep the door cracked open a bit?  I guess this is more of a smoker issue and not jerky specific (mods, please move this if it should be somewhere else).  Any suggestions to keep the smoke rolling?
 
I think that may be the ticket.  I was reading about those yesterday, and would've bought one locally if it was possible.  Probably gonna have to give Todd a ring.  Thanks!
