Hi, I have been smoking a boston pork butt for 24hours now.  It is around a 10lbs butt and I putt it in the smoker yesterday at 7:30am.  I put it in foil after about 5 hours when internal hit 140.  It has been smoking ever since.  I thought it would be done by now.  Last night at 9pm the internal was 190 ....so I didn't think it would take this long to get to 200.  I have woke up every hour to check the temp and it is at 197 right now at 7:20am.   The smoker has been at a constant 225.  I will be patient with this and not take it out until it hits 200. I do have pics so when its done I will post them!!  Has this happened to anyone else?

Hey tamster....IMVHO that seems like a long smoke to me for a 10# butt... but, there's a bunch of things that could be impacting it.  First, are you using reliable thermos to monitor temps?  Also, did you hit a stall during the middle of the night?  Butts are famous for a stall and sometimes the bigger the butt the longer the stall.  But... the stall should have happened at a lower temp than 197.

Have you been checking the IT in several spots on the butt?

Again, IMVHO, I usually pull my butts out of the smoker at an IT of 190* if I'm going to pull the pork and then wrap and toss in a cooler for an hour or so....you might want to pull that thing at 197* if you know it's reading that high in the entire hunk of pork.

Every piece of meat is different. It could be done at 197. Take a tooth pick or your temp probe & stick it in several places. If it goes in without any resistance it's done. 
 
You have the right plan, leave it in until it hits the desired temp.

Ok, well I was up all night with this butt.  I woke up every hour to check the temp.  It never got above 197.  It sat there for a couple hours.  Finally, I took it out after 25 hours!  It turned out awesome!!

This pork butt took 25 hours to get to 197. And it wouldn't get any higher. I was up every hour last night thinking it would hit 200 soon. It never did....and sat at 197 for a couple hours. It turned out awesome!!  I have never tried to put pics in a forum and it is not what i had planned but the meat turned out good!!
 
Rarely do I have a pork butt go over 2 hrs per, but it does happen. I have had butts stall twice as well. From your pic it don't look like its over cooked to me.
