Had some leftover brisket from Christmas day and needed to do something with it so I fired up my dutch oven and made some chili.  I used my competition bean chili recipe and just cut back on the ground pork and added my brisket left over from a few days prior.

It turned out great!  Too bad I don't have the time on "cook day" to smoke a brisket first to use in my comp chili!

Now your chili looks good. I have always cooked my chili with big chunks of meat instead of just plain ground beef. I think it is better.

Why thank you sir!  In my chili comps we have to use "ground" (CASI) but I usually ask for a chili grind which is much more coarse than your regular ground beef.  If the "local" comps were ICS they would use "cubed" meat.  I also attempt not to "break up" the ground beef when I use regular because I don't want "Hormel/Cincinnati" chili either!

That's some great looking chili Mike. Nothing better than a bowl of chili on a cold winter day, and it's cold down here in Florida today!

Thanks Al!  I heard it was a little nippy down there today!  Have fun with that, supposed to be 65 here tomorrow, very very rare at this time of year!
