Today is my sausage stuffer arrived. I tryed my Jamaika Jerk Pork/Beef sausage, smoked with cherry wood. During the time i maked a sandwitch with Skirt Steak and selfmade Guacemole.

Yep, after looking at this, I'm out of here, headed to the house for some leftover roast beef myself.  Looks good John keep it up.
 
Great looking sammich and sausages Texas BBQ.  Skirt steak here in the U.S. in the past has been under-rated and was often tossed into the meat trim lug to be made into hamburger. It's now more readily available in some markets.

I find it a great piece of meat to marinade and grill or sliced thin and sauteed with thin sliced onion and bell peppers for use as fajitas.

Okay it's offical-it is now 12:30 pm my time and it's time for lunch!!!

I bought the same stuffer right before Christmas. I will use it for the first time this weekend.  You did a nice job on the sammy and the sausage. Looked great . !

The only thing I found out from the folks here on SMF about this particular stuffer is to payattention to how the gasket goes on, and it was reccomended to go ahead a pruchase a spare gasket for future use as a spare. They sure ar nice and heavy and mine is "2 speeds". I suppose the one you have is also. it looks like the one I bought.

How did you like the stuffer? Were you able to stuff by yourself or did it take 2 people.
 
Man that is a great post. Awesome presentation.  When did they get Avocados in Germany - we never found them when we were there
