Great looking brats Dutch! Got a 5lb stuffer for Christmas as well and will be doing an initial run this weekend!  Hope mine turn out as well as yours.

Craig-Since I'm doing small batches my KA grinder attachment works fine for now. However, Harbor freight has their electric meat grinder on sale for $49.99

. I also have a 6 foot stainless steel table in my garage that will become my sausage making station. Just gotta get the kids to move their junk to THEIR house.!

Nice looking brats. Do you buy spares all the time and make BBs out of them and save all the trimmings from that? Sounds like it would make great sausage.
Alelover, I buy full slab of spares and trim them down to St, Louis style. Some of the skirt meat and the leaner trim goes into the smoker to be added to my WBB. The rest of the trim gets vac sealed, the date and weight info is added and then placed in the big freezer. I probably have 6 or 7 lbs still in the freezer-enough for another couple of batches once additional fat is added.

Bill, just make sure your sausage is plenty moist-if it's too dry you'll blow out your casings and/or get blow back from around you seal.  Just take your time and go slooow with the cranking-that will help reduce blowouts and blow back also.
