1st beer can chicken

decided to try a chicken on the off set smoker, beautiful day for Jan 2nd in western Nebraska...and YES,  the Huskers played like crap..it should have been called the toilet bowl..

anyway..enough of that soar subject..

washed and cleaned up the chicken and did a combo rub of cowboy rub and kickin chicken, got the smoker up to 235 and had it in there for about 3 1/2 hours til the internal temp hit 165..i can't believe i waited this long to smoke a whole chicken.  awesome flavor and full of juice.  i also chopped up some spuds, onions and added numerous seasonings along with some EVOO in the foil and tossed on the smoker also.

Great looking Yard Bird!  You do have to wonder why we put off smoking some things for so long.  In my case, it was just ignorance, I guess.  Thank God I'm enlightened now!  LOL!  It'll be hard to go back to regular cooking with so many dishes...

 

Love your part of the country, BTW.  Spent a little time in the Platte River valley around Scottsbluff in '05, and was quite impressed with the Platte region.

Bluffs is where i'm at right now...i like the area..but some days it would be nice to get up and move some where else..to get away from all the lil town drama...gets old real quick
