decided to try a chicken on the off set smoker, beautiful day for Jan 2nd in western Nebraska...and YES, the Huskers played like crap..it should have been called the toilet bowl..
anyway..enough of that soar subject..
washed and cleaned up the chicken and did a combo rub of cowboy rub and kickin chicken, got the smoker up to 235 and had it in there for about 3 1/2 hours til the internal temp hit 165..i can't believe i waited this long to smoke a whole chicken. awesome flavor and full of juice. i also chopped up some spuds, onions and added numerous seasonings along with some EVOO in the foil and tossed on the smoker also.
